However, the convenience of AI may tempt some students to take a shortcut on the writing assignment. They might want to simply copy from AI. I would distinguish the purpose of the writing practice.

If I want to emphasize independent writing, I would let them write in class instead of bringing it back home.
If it's a project and the grading focus is not on the writing skills, but the ideas, I'd allow them to take it back home but - they need to fill in a form to show an acknowledgement of using AI, in which I inquire what prompt demands they ask the AI to do. I think the process of copying from a model can let them learn, too.
